In case you are out of ideas, here is a great recipe for extraordinary and very tasty birthday cake. This delicious chocolate cake is creamy, fluffy, loaded with cocoa flavor and is literally melting in your mouth.
Ingredients for a baking tray with diameter 20 cm
- 180 g flour
- 150 g granulated white sugar
- 125 g brown sugar
- 60 g cocoa
- 1 and 1/4 teaspoon baking soda
- 1 and 1/4 teaspoon baking powder
- pinch of salt
- 2 eggs (at room temperature)
- 140 ml yogurt
- 75 ml cooking oil
- 140 ml fresh hot coffee
The oven must be pre-heated to 180 ° C. Put the flour, both types of sugar, cocoa, baking soda, baking powder and salt in a deep bowl and mix well. Mix the eggs, oil and yogurt and add them the dry ingredients. Mix everything very well. At the end, add hot coffee and stir the mixture until it becomes smooth and homogeneous. Do not worry about the mixture being more liquid than a classic cake dough. This is why the cake is so juicy and soft.
Pour the mixture into a baking tray which you’ve oiled and covered with cocoa. Bake for 40-45 minutes depending on the oven. Once the spongecake is ready, let it cool and then cut into 3 equal parts.
Ingredients for Chocolate Mousse
- 400 g chocolate (200 g dark chocolate and 200 g milk chocolate)
- 400 ml heavy cream
- 3 egg yolks
- 3 egg whites
Cut the chocolate into small pieces. Heat the heavy cream until it starts to boil and pour it on the chocolate. Allow it to stand for a minute and after stir until you get a homogeneous mixture. Cool to room temperature stirring from time to time. Beat egg yolks and then steam them. Be careful when stirring the yolks since they mustn’t come in contact with the water. When cooked, add them to the warm chocolate ganache. Stir very well. Cool ganache to room temperature and then put it in the refrigerator for an hour until it thickens. Beat egg whites until stiff. Slowly add them to the chocolate mixture (ganache) stirring gently. Put mousse back in the refrigerator for another 30-40 minutes or until it thickens.
Cake stacking
On a platter or a cake stand put one chocolate sponge cake. Put a layer of mousse on top and spread evenly. Repeat this step with other two sponge cakes ending with mousse. Use your imagination for decorating – it will not let you down!
